Hot Selling Hatsukokoro VG10 Chinese Cleaver

A great value stainless clad VG10 core Chinese cleaver from Hatsukokoro.

Perfect for a range of jobs but unlike thicker and softer steel cleavers, this is one is more akin to a large and very tall general use knife as it’s much thinner and harder at treated to around 60HRC.

In hand, it’s nimble and comfortable although with the full tang blade, you may find some rougher edges where the tang and handle aren’t completely smoothed and in these cases you may wish to just smooth it down a little with some high grit sandpaper. 

Despite the cleaver name, we don’t recommend hacking through bone with this knife and that you consider the use of it more like you would with a gyuto, santoku or nakiri.

This knife has been made in partnership between Hatsukokoro and one of Japan’s major knife making brands although due to their commercial agreements we’re not able to publish the name.
